Anyone who has a wood-fired pizza oven will want to pick up The Essential Wood Fired Pizza Cookbook: Recipes and Techniques From My Wood Fired Oven by Anthony Tassinello, who is a chef at the famous California restaurant, Chez Panisse. His passion for wood-fired ovens shows through in this excellent cookbook.
The beginning of the cookbook includes chapters on the types of wood fired ovens, as well as setting one up and the basics of using one. Of course, there are dozens of recipes for mouthwatering pizzas, but the cookbook also includes side dishes and other items that can be cooked in the ovens. There are also several different recipes for doughs and even for Foccacia (which turned out perfectly when I adapted it to my automatic bread machine). The author has put notes at the beginning of each recipe, which include tips, vignettes, and pertinent information for the individual recipes. The actual recipes are written in the traditional manner with the ingredients listed first, followed by step-by-step instructions that are easy to follow. The recipes are suitable for all cooks, whether they are beginning or advanced.
Although there are beautiful, professional photographs throughout the cookbook, there aren’t photos of every recipe; that is the only downfall to this cookbook; there needs to be more. However, that shouldn’t top pizza oven enthusiasts from purchasing the book because it has plenty of great recipes that will appeal to almost everyone.
All told, anyone with a wood-fired pizza oven, or any pizza oven for that matter, will want to make the recipes in this cookbook.
